I’ve been looking for something to replace dairy milk. While I'm not completely lactose intolerant, I get stomach cramping when I consume too much of it. So Delicious Coconut Milk is exactly what I've been searching for! The marketing folks at So Delicious say it tastes just like dairy milk. I disagree – it tastes better.
How have I used it?
The first test was regular flavored So Delicious, instead of cow's milk, to cook morning oatmeal. The So Delicious was wonderful - creamy and smooth.
Then, I tried the vanilla flavored So Delicious in my coffee. In an effort to be healthier, I’ve been doing without creamer for years. Until trying So Delicious, that is. It made my coffee rich and creamy with just the right touch of vanilla.
I’ve had So Delicious straight up and have had it poured over cold cereal. Both were yummy. Next up is to try it to make instant pudding.
Nutritional Bonanza
So Delicious Coconut Milk has good nutritional value, too. It has medium-chain fatty acids that burn easily for energy rather than get stored as fat. It has no cholesterol, is dairy-free, soy-free and certified organic. It’s also kosher, vegan and certified non-GMO (genetically modified Franken-food). It's also a good source of B12 and calcium.

I have inherited a wonderful recipe for rice pudding from my mother. I'd definitely like to try So Delicious Coconut Milk as a substitute for cow's milk in that dish. I'm always searching for ways to make healthier meals for my family (especially in ways they don't even notice).

Try it over ice with a little Sweet Creme flavored Coffee Creamer (Coffee-Mate). It is awesome !! You can easily change up the flavor and make a different flavor drink each time you drink it by adding just a bit of Coffee-Mate !
Bake with it, use it in lieu of milk. Make my Gluten-free protein shakes and smoothies with it, use it in my coffee, love it better than any dairy, want to use it in lieu of buttermilk for my GF buttermilk pie. And it makes an awesome GF chicken noodle curry soup. :) yum....

I just went on a pumpkin baking spree and made pumpkin chocolate chip cookies AND pumpkin pie, both with so delicious coconut milk. They turned out so sweet and creamy!

I love using coconut milk as a substitute for water when making rice, it makes the rice extra moist and delicious! Also steaming it for hot cocoa is a treat!

I was diagnosed with Ulcerative Colitis 3 years ago. I was told in order to reduce a flare, I needed to rid my diet of all dairy milk. I was so upset because I usually love milk and was hesitant to try other milk alternatives. Recently, I tried almond milk and must say it was delicious.
